Four parts are available:
- Back loin – the best part of the fish. Skinless, boneless. Ideal for sushi/sashimi, portions, sous vide
- Belly loin – the fattest part of the fish. Skinless, boneless. Ideal for portion, sushi
- Tail – rich in taste. Skinless, boneless. Ideal for salads, fish and ships, Chinese dishes.
- Fillet – 3 different cuts for testing. 1) Skin on bone in.2) Skin on, boneless and 3) skin less and bone less. Ideal for portions, food service
